Chef Maharjan’s love for herbs took root in his childhood kitchen in Kathmandu, where his grandmother nurtured a little garden on the windowsill. “Herbs were like medicine, spice, and decoration all rolled into one,” he fondly remembers. Nowadays, he combines those cherished memories with contemporary techniques—propagating cuttings, using companion planting to keep pests at bay, and even trying out edible flowers like nasturtium for a beautiful garnish.
